Navratri is a special time that beautifully combines devotion, prayers, and the joy of savoring sattvik meals. These meals are designed to be light, nourishing, and perfectly aligned with fasting traditions. If you’re searching for a dish that’s both comforting and feels indulgent without being heavy, Lauki Paneer Koftas, also known as muthiya-style koftas, are an excellent choice. They work wonderfully as a snack or can be a hearty part of your meal when served with farali kadhi or a refreshing yogurt dip. This recipe is shared by Malvika Hada Kumar.
Here’s how to make it
Ingredients:
- 1 small lauki (bottle gourd)
- ¼ cup grated paneer
- 2 cups rajgira flour (amaranth flour)
- 1 tsp cumin seeds
- Rock salt, to taste
- Pepper, to taste
- 1–2 chopped green chillies
- 2 tbsp chopped fresh coriander
- 1 tsp chopped ginger
- For tempering: 1 tsp cumin seeds, 2 sprigs curry leaves, 1 green chilli
- A dash of lemon juice
Method:
- Begin by peeling and grating the lauki. Squeeze out all the excess water.
- In a mixing bowl, combine the grated lauki, paneer, rajgira flour, cumin seeds, rock salt, pepper, chopped green chillies, coriander, and ginger.
- Add just enough of the squeezed lauki water to knead everything into a soft dough.
- Shape the dough into small muthiyas (dumplings).
- Steam these muthiyas for about 12 to 15 minutes.
- Once cooled slightly, cut them into bite-sized pieces.
- In a pan, heat 1 to 2 tsp of oil. Add the tempering ingredients: cumin seeds, curry leaves, and chopped green chilli.
- Add the steamed lauki paneer muthiya pieces to the pan and toss them well.
- Cook for 2 to 3 minutes until they are slightly crisped.
- Finish with a dash of lemon juice.
- Serve the Lauki Paneer Koftas warm.
