- 5gms Alkaline Soda

Ingredients:
- 1kg Chicken bones (feet and wings recommended)

Method: Add all ingredients to a pot, cover with water, and bring to a boil. Reduce to a simmer and cook for 4-5 hours until the broth reduces by half. Skim off any impurities and strain before use.
Chicken Roulade
Ingredients:
- Chicken skin (from leg)
- 2 Chicken breasts
- 1 Chicken leg
- 5ml Char Siu powder
- Coriander stems (to taste)
Method: For the filling, debone the chicken leg and blend the meat with char siu powder and coriander stems until smooth. Lay one chicken breast flat, spread the filling, and top with the second breast. Roll tightly in cling film, then foil, and steam for 20 minutes. Immediately plunge into an ice bath to cool.
Char Siu Pork
Ingredients:
- 3kgs Pork belly
- Char Siu powder (enough for a dry rub)
Method: Generously coat the pork belly with char siu powder. Place in a sous vide bag, seal, and cook at 68°C for 12 hours. Remove, let it rest briefly, then slice and serve hot. For an extra crispy texture, sear the slices in a hot pan.
Perfect Soft-Boiled Eggs
Ingredients:
- 2 Eggs
- Boiling water
- Ice
- Salt to taste
Method: Gently lower eggs into boiling water and cook for exactly 6 minutes. Immediately transfer them to an ice bath to stop the cooking process. Peel and season with salt. Enjoy!
